Spring tajine with peas and eggs: simple meal that will wow your guests!

We truly believe that the sky’s the limit when it comes to almost limitless possibilities of preparing tagine, the famous Moroccan stew that takes its name from the traditional bowl it’s traditionally prepared in. One of the characteristics of Moroccan cuisine, besides its simplicity, is the combination of sweet and salty flavor. It is also very common to add dates, raisins, pistachios…

Another strength of Moroccan cuisine is the use of spices and condiments, the main ones being cinnamon, cumin, turmeric, ginger, pepper, saffron, and many others.

On this occasion, since here we are in the spring, we want to present a plate full of colors and a symbol of the cuisine of this country. This recipe will also serve as an excellent spring cure for your body. When tasting this dish, it is recommended not to use cutlery and eat it by  dipping a piece of bread in the dish.

 

Ingredients (for 2 people):

– 1 chopped onion

– 300 grams of peeled peas

– 2 cloves of crushed garlic

– Ginger

– Spicy paprika

– Black pepper

– Salt

– 2 eggs

– Oil

– A handful of parsley

 

Here’s a quick guide to prepare it:

  1. Put the Tajín on the fire with a dash of olive oil. Once it is hot, add the chopped onion, the garlic, some parsley and the spices mentioned above. Stir in onion and cook for 10 minutes until soft.
  2. When the onion is tender, add a glass of water and when it starts to boil, add the peas and more parsley. Let it cook over medium heat. Add a little more water if necessary to prevent the mixture drying out.
  3. When the peas are done, we break the two eggs on top and cover the Tajín with its lid and leave it on the fire until the eggs are curdled.
